Healthy Dinner Using Meyer Lemons

I found a luscious tree in the desert with tons of Meyer Lemons which happen to be my very favorite citrus.  Two bags later, I started brain storming on ways to use my precious lemons before they rotted.

My lemon soufflé was a flop the other night UGH! One tip, never use low-fat milk. It has been a long time since I messed up on a soufflé and boy did I.  Lemon water is is delicious and refreshing.  Meyers are great for marinading.  How about barbecuing the lemons with your food?  The flavor becomes more intense and it looks beautiful when garnishing a serving platter.  

We are all busy getting a jump start on the New Year so enjoy this very simple, healthy dinner.

Chicken:
Pounded chicken breasts
Use left over herbs in the refrigerator.
Try any spices you like, cumin is a must.
Olive Oil
Meyer lemon juice
Marinate for at least for 5 hours or overnight in all the goodies above.


Zucchini:
Slice zucchini very thin.
Marinate in herbs de provence and lemon pepper.
Olive Oil
Meyer lemon juice

Green Beens:
Marinate in Olive Oil, Meyer lemon juice, and Herbs.

Veggies are great served with a Horseradish Aioli Sauce:
Prepared horseradish
Sour cream 
Whipping cream 
Meyer lemon juice

The meal was really tasty,  and satisfying.  Grill up enough chicken to have for a few days. It is a great source of protein and and will satisfy you without a lot of calories.
